Morning Muffins

Healthy & hearty vegan muffins with just the right amount of fruits, veggies, & sweetness.

Ingredients

  • 3 tablespoons warm water

  • 1 tablespoon ground flax seed

  • 1 ½ cups whole wheat flour

  • 1 cup oat bran

  • ½ cup rolled oats

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon pink Himalayan salt 

  • ½ cup brown sugar

  • 1/3 cup maple syrup

  • 1/3 cup vegetable oil

  • 1 cup applesauce

  • 3 carrots, peeled & grated

  • 1 Honeycrisp apple, grated

  • ½ cup cacao nibs, optional

  • ½ cup shredded unsweetened coconut

  • Apple butter, for serving

Steps

Preheat oven to 350 degrees F. Line or oil a 12 cup muffin. In a small bowl, whisk together the flaxseed & warm water. Let it sit for several minutes so it can thicken.

Combine the flour, oat bran, rolled oats, baking soda, baking powder, & salt into one bowl. Stir. In a small bowl, combine sugar, maple syrup, vegetable oil, & applesauce. Whisk until smooth and then add the flaxseed mixture. Add to the flour mixture and stir to combine. Gently stir the apples, carrots, cacao nibs, coconut flakes.

Divide the batter evenly among the tin cups and bake for 25-29 minutes. Once baked, the tops will be golden and crispy, remove from the pan and let cool on a wire rack. Serve with apple butter.
