Pork Chops in Apple Butter

Oven roasted pork chops smothered in apple butter. Perfect for a chilly fall day.

Ingredients:

  • 1 lb. pork chops

  • 1 teaspoon Dijon mustard

  • 1 tablespoon fresh rosemary, chopped

  • Pink Himalayan salt

  • 1 tablespoon olive oil

  • 2 tablespoons apple cider vinegar

  • ¼ cup apple butter

  • 1 teaspoon fresh chives, chopped

  • Fresh ground pepper

Steps:

On baking sheet, rub pork chops with the mustard, rosemary, salt, and pepper. In skillet, on high heat, warm ½ tablespoon of olive oil & sear chops on each side until browned. Remove chops from heat and place on baking sheet. 

In a small bowl combine remaining ½ tablespoon of oil with the apple cider vinegar, apple butter, and pink of salt & pepper. Spread that mixture all over chops and roast for 15-20 minutes depending on thickness of chops. Let rest for 15 minutes.

Spread remaining apple butter mixture on cooked chops and sprinkle with fresh chives.
