Brioche Egg in a hole Sandwich
Delicious breakfast sandwich with loads of spinach, a little bit sweet & savory. Perfect for the leftover brioche bread from French toast the morning before.
Ingredients:
4 slices brioche bread
2 tablespoons salted butter, room temp.
2-4 eggs
½ cup Monterey Jack cheese
2 cups spinach, packed
Salt & pepper
Avocado, optional
Steps:
Heat a skillet over medium-low heat. Spread butter over one side of a brioche bread slice. Using a knife, cut a hole in one slice of bread. Add the two bread slices to the heated skillet and toast for 1 minute. Crack an egg into the slice of bread with a hole in it. Season gently with salt and pepper. Continue to cook for 2 minutes. Flip both bread slices. Sprinkle the tops of the bread with ¼ cup cheese and continue to cook for an additional 3-4 minutes.
Once the egg is cooked to the desired level of doneness and cheese is just melted, remove from heat. Add 1 cup of spinach on top of the melted cheese and close the sandwich.
Repeat steps for the other sandwich.
Optional: add sliced avocado to freshly cooked sandwich.
