Mayo

Easy homemade mayo. Keep in the fridge and it will last until the egg’s expiration date. No processed food.

Ingredients:

  • 1 egg

  • 1/2 teaspoon salt

  • 1 tablespoon fresh lemon juice

  • 1 cup + 2 tablespoon olive oil

Steps:

In a ninja blender, add 1/4 cup olive oil, lemon juice, salt, and egg. Let it sit on the counter for at least 30 minutes. Everything needs to be room temperture. This is the most important step.

Run the blender on low for about 30 seconds and then remove the cap insert and slowly drizzle the remaining olive oil in, while slowly increasing the motor speed. Once the motor (on the blender) shifts, you’ll pour the rest of the oil in. You might not use all of the oil.

Scoop into a container with a tight fitting lid and keep in fridge until egg’s expiration.
