Cauliflower Purèe

The perfect side dish to accompany a variety of meals. Cauliflower is seasoned with thyme and deliciously smooth.

Ingredients:

  • 1 head cauliflower, chopped

  • 1 cup vegetable broth

  • 1 tsp. kosher salt (+ more to taste)

  • 3 tbsp of ghee

  • 1 tsp chopped fresh thyme

  • Fresh ground pepper

Steps:

In a large pot, with vegetable broth and salt, add cauliflower to a steamer basket. Bring to a boil. Once it boils, reduce heat and steam for about 20 minutes, or until cauliflower is very tender. 

Transfer cauliflower to food processor or blender. Add 3 tablespoons of the broth from the pot and the ghee. Blend until smooth. Taste and adjust seasoning with salt & pepper. Add thyme and blend. Serve hot.
