Serves 4 /. Time 10 minutes
10 oz. arugula lettuce
2 heirloom tomatoes, roughly chopped
1 cup strawberries, chopped
¼ cup goat cheese or 1/4 cup mozzarella balls
¼ sliced almonds, toasted
¼ cup fresh basil leaves, torn
Maldon salt
Balsamic glaze, for dressing
1/ Heat a saute pan over medium low heat. Add the sliced almonds and toast, stirring frequently, until golden brown about 3-5 minutes.Remove from heat immediately.
2/ Once tomatoes are chopped sprinkle with Maldon salt. Add arugula & basil to a large salad bowl & mix, next add strawberries, tomatoes and almonds. Pinch goat cheese into pieces all over salad. Drizzle with balsamic glaze.
