Stuffed Bell Pepper Soup
Hearty grain-free soup filled with bell peppers, onions, tomatoes, and cauliflower rice. Perfect for any day.
Ingredients:
Olive oil
2 lb ground beef
1 yellow onion, chopped
3-4 cloves garlic, minced
3-4 red, yellow or orange bell pepper, chopped
½ tsp. dried basil
½ tsp. dried oregano
2 cans fire roasted tomatoes (14 oz ea.)
10 oz. canned tomato sauce
3 green onions, chopped
10 oz. cauliflower rice
Kosher salt
Fresh black pepper
Steps:
On the stove top, add oil and heat on medium high until oil shimmers. Add onion and cook until translucent. Add garlic and cook for 1-2 minutes, stirring constantly. Next, add the chopped bell peppers. Once the pepper have softened, add the ground beef, and season to perfection with salt & pepper. Stir occasionally.
Once the beef as cooked through, add the basil & oregano. Stir throughout the mixture. Next, add the canned tomatoes & sauce, and cook for an additional 5 minutes. Add the cauliflower rice, cup by cup, and a ½ cup of water. Season to perfection with salt & pepper. Bring to a boil and reduce to simmer, stirring occasionally for 13-15 minutes, until the cauliflower rice is cooked.
Serve hot with green onions as garnish.
