Roasted Veggie Sandwich

Roasted Veggie Sandwich with Herbed Goat Cheese

Serves 2-3 / Time 30 mins

1 loaf of ciabatta bread or hearty bread
1 eggplant, sliced
2 zucchinis, sliced lengthwise
½ red onion, sliced in wedges
1 red bell pepper, sliced into large chunks
3 cloves garlic, peeled and smashed
1/3 cup olive oil
¾ teaspoon kosher salt
¼ teaspoon ground pepper
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon paprika
2 tablespoons chopped fresh thyme
4-6 oz. goat cheese

1/ Preheat oven to 425. Place all sliced veggies on a parchment lined baking sheet. Combine, olive oil, salt, black pepper, garlic powder, onion powder, and paprika and stir to combine. Brush both sides of the sliced vegetables and place in oven for 15 minutes, flip slices & continue to cook for 10 minutes.

2/ Meanwhile, combine the chopped thyme with the goat cheese and mix well to combine.

3/ Toast the bread lightly in the oven in the last few minutes of the vegetables roasting. Take a heaping amount of goat cheese and spread on a slice of bread. Follow with a lots of slices of vegetables. Top with another slice of bread. Eat!
